Have you also fallen under the cold brew spell? Cold brew coffee is brewed with cold water as opposed to the classic brewed coffee, which is poured with hot water. The short extraction in hot water is replaced by a slow and long extraction in cold water. This gives the resulting drink slightly different characteristics. The coffee is characterised by lower acidity, lower bitterness and greater sweetness. The body of the coffee is beautifully full and its aroma is fully developed. Cold brew coffee is one of the best preparations we have tried so far.

The Hario Clear Water Dripper is a fantastic addition to any coffee shop, but feel free to take it home. It manages to grab everyone's attention and makes viewers feel like they're watching a complex science experiment.

In the upper container is cold water, which slowly drips through the stainless steel filter into the lower serving pot. A metal valve makes it easy to adjust the speed at which the water flows. Filtration can take several hours, depending on the valve setting and your taste. The ideal setting is a flow rate of 1 drop per second. A full container is then filtered in approximately 5 hours. You can also experiment with the coarseness of the coffee you choose.

Then you or your café guests can watch the coffee slowly trickle through. A wonderful calming element. And the coffee from it is sure to charm everyone.
