About this coffee:

The new Jacinto Jara coffee comes from the El Palto farm in the Cajamarca area of Peru. This particular lot comes from a small 3-hectare plot owned and operated by producer Jacinto Jara and his family, who live and work on the farm. El Palto is located at an altitude of 1900 meters above sea level and is planted with varieties Catimor and Caturra

In recent years, it has become increasingly clear that climate change and temperature fluctuations are creating many problems for growing coffee at this altitude, especially drought. One way to help mitigate the risks posed by climate change has been to plant taller trees around growing areas and also to build efficient irrigation.

Processing and harvesting

Harvesting usually takes place from June to October. For the washed process, the cherries are first washed, crushed and then fermented for about 32 hours. They are then washed again to remove any coating and then dried in solar tents for 15 days depending on weather conditions. It is then prepared for storage. Once the coffee is ready, it is taken to the Falcon warehouse in Jaen, where its quality is assessed. At this stage, the price is agreed depending on the given cup score. Finally, the coffee is transported to a dry mill called Café Selva Norte SAC and the quality is checked before it is packed in bags and moved to the port for transport.
