About this coffee:

Thenew Jacinto Jara coffee comes from the El Palto farm in the Cajamarca region of Peru. This particular lot comes from a small 3 hectare plot of land owned and operated by producer Jacinto Jara and his family who live and work on the farm. El Palto is located at an altitude of 1900 metres above sea level and is planted with Catimor and Caturra varieties

In recent years it has become increasingly clear that climate change and temperature fluctuations have created many problems for coffee growing at this altitude, especially drought. One of the ways to help mitigate the risks caused by climate change has been to plant taller trees around the growing areas and also to establish efficient irrigation.

Processing and harvesting

Harvesting usually takes place between June and October. For washed processing, the cherries are first washed, crushed and then fermented for approximately 32 hours. They are then washed again to remove any coating and then dried in solar tents for 15 days, depending on weather conditions. They are then prepared for storage. Once the coffee is ready, it is taken to the Falcon warehouse in Jaen where it is assessed for quality. At this stage, a price is agreed depending on the cup score. Finally, the coffee is transported to a dry mill called Café Selva Norte SAC and checked for quality before being bagged and moved to the port for shipment.
