Criollo is an indigenous and rare variety of cocoa known for its unique aroma, although it has a low yield. There are few farmers in Peru who cultivate it because of its low yield. Our Criollo cocoa beans come from small-scale growers in the area near Pucallpa, where this variety is exceptionally successful. The beans are harvested on a small plantation and processed with an emphasis on quality.
The Criolla tree produces fewer fruits, but they are among the best quality in the world. The seeds have a characteristic shape - they are round, slightly flattened and have a light purple to white tinge before fermentation. This cocoa is known for its fruity aroma, subtle nutty notes and a slight bitterness that is refined and balanced. Thanks to its characteristics, it is used to produce top-quality chocolates and gourmet delicacies.
Our favourite recipe for intense, almost ceremonial cocoa: Heat 1 litre of water to boiling, add 45-50g of cocoa mass, 2 cloves, a pinch of 100% cinnamon and sugar or honey to taste. Simmer over low heat for approximately 10 minutes and enjoy the rich flavour.
Warning:
- Store in a cool, dry, dark place.
- The paste is not free of cocoa butter, so please don't be alarmed by "oily eyes" on the drink.
- Fat will render on the surface of the table, discoloration is not a detriment. When the cocoa is prepared, the fat will dissolve and create a consistent drink.
- It is not enough to pour hot water over the cocoa, it must be simmered for a while.
