Donaldo G. Fiallos manages the Sol Naciente farm in the Copán region of Honduras, where he started growing lempira coffee. This hybrid is bred specifically for Honduran conditions and is unique in its flavour profile and the care it receives during processing.
After harvesting, the cherries are brought to the Aruco washing station at a lower altitude, where the climate is more stable for drying coffee compared to the mountains. In Aruco, the coffee cherries are cleaned and washed, placed in barrels which are sealed and macerated at a temperature of 22-25ºC. The coffee is then moved to African beds and dried there for 20 to 30 days with regular turning.
