Boji is a processing station located in the beautiful area of Kochere, where it works with about 500 small coffee growers. This area is located near the town of Yirgacheffe, famous worldwide for its exceptional coffee.
In Boya, coffee cherries are processed in the traditional natural way that has been used in Ethiopia for generations. They are first immersed in water to check their ripeness and remove any damaged or unsuitable fruit. The cherries are then thoroughly washed with clean water and spread on the drying field. They are initially dried in a single layer and turned by hand every 30 minutes to ensure even drying and to remove any defects. After a few days, the layer of cherries becomes larger, slowing down the drying process and improving the quality of the coffee. The whole process takes approximately 2 to 3 weeks.
