Benedicto Puentes, a farmer from the Tolima region of Colombia, focuses on fine coffee and improving conditions not only on his Palma Roja farm but also in the surrounding area. The farm, founded in 1995 by his parents, grows coffee trees in a high mountain area without shade. The coffee trees are seven years old and Benedicto is committed to improving the quality of production.
With his wife, Helena Oliviero, he is actively involved in improving coffee processing and helping local farmers achieve better prices for their produce. He offers them free advice on processing and negotiating with traders.
Benedicto also buys ripe cherries from neighbours and shows how careful processing increases the quality and value of the coffee. The goal is to gain recognition for Tolima coffee on par with Huila coffee.
A lot of coffee on his farm has undergone a semi-washed fermentation method. After hand-picking, the cherries fermented for 50 hours in the husk, followed by 20 hours in the tank. Drying took place for 15 days on African beds or in a kiln. Every step, from picking to final coffee, was done manually with an emphasis on precision.
