The Karimikui processing station is located at the foot of Mount Kenya and is affiliated to the Rugetu farmers' cooperative. This consists of over 600 smallholder farmers from the villages of Githureia, Gituba and Kiamugumo.
The farmers of the Rugetu cooperative place great emphasis on selecting only ripe cherries, which are of high quality due to the ideal average temperature ( 13-24°C) and the volcanic soil. After harvesting, the cherries are de-skinned and then subjected to a qualitative classification according to their density. They are then fermented in the shade for 16 to 24 hours, during which the remaining pulp loosens from the bean and also stabilises the coffee's flavour profile. The last step before drying is to immerse the beans in tanks of clean water for 16-18 hours. This processing step is typical of coffees from this country, which are then referred to as washed & soaked. The beans also receive the necessary care during the drying process, which takes approximately 20 days and uses special cloth dryers to ensure proper airflow and avoid unwanted fermentation. Finally, the coffee is sorted according to size (one of the categories is designated AB on this lot) and packaged for export.
