Rebelbean: We were lucky enough to travel around Costa Rica and visit the coffee plantations and farms there. Among them, the La Candelilla processing plant, where bags of this particular coffee came to us. The station is run by the Sanchez family, who farm 70 hectares of fertile land. They process 100 tonnes of green beans a year, which, to give you an idea, is about 500 tonnes of raw coffee cherries. And that's a lot of work - that's why all seven siblings of the Sanchez family take care of the farms and the mill.

Costa Rica is a developed, wealthy country with a good infrastructure. That's also why the scale of the family farm is somewhat different from, say, Guatemala or Peru. The coffee-growing areas around the capital San José are varied and the microclimates between them are quite different. In particular, Tarrazú, where these beans come from, is an area with high altitudes and steep green hillsides. We liked it the best of all the farms we visited. The processing station ran like a perfectly lubricated machine, operating 22 hours a day during the harvest. The other two hours of the day were reserved for cleaning the machines, so basically non-stop operation. However, it's no wonder the Sanchezes have a batch brew bunn in the office for 3 litres of coffee.

Among other things, the Sanchez family is involved in the Bean Voyage project, which connects farmers from all over the country to strengthen their position in the market, but also have the opportunity to educate and improve themselves. The program focuses on ecology, biodiversity, preserving Costa Rica's unique ecosystems, as well as fair coffee prices and long-term collaboration with importers.

We have had coffee from this farm in the roastery for several years now and the quality has been admirably stable. The flavour always stands out with a lighter medium body, overall it is balanced, delicate and smooth. The combination of sweet fruit, complex acidity and delicate floral aromatics blend together perfectly!
