Pablo Muñoz manages a farm near the town of Bruselas with his cousin Gabriel. Their farm is situated quite high up in the mountains, where they have planted less than 3000 bushes. They focus mainly on the Pink Bourbon or Geisha variety. In addition to coffee, they also produce avocados.
The lot is processed using a washed method that Pablo has already fine-tuned to the last detail. After hand-picking the cherries, they sort them from unripe, overripe or rotten fruit and then rinse them. During processing, the cherries are first sealed in sacks and left to ferment for 30 hours. After peeling, they are then returned to the cherry tree, where they remain for a further 36 hours. They are then washed and stripped of any remaining pulp. This process aims to soften the texture of the coffee, increase the sweetness and stabilise the flavour profile.
Drying takes place in several stages. The first is carried out on the farm, where the beans are dried in smaller layers with frequent turning. The coffee is then moved to the town of Pitalito, where Carlos has a warehouse and laboratory. Here the coffee is dried on African beds and stored for two months in ideal conditions to stabilise it before being exported.
Like our other coffees, this one is omni roast. So you don't have to limit yourself to just espresso. We drink it at our batch brew almost every morning.
