Flavour.
Finca Santa Isabel is located less than 60 km southeast of the capital Guatemala City. For 4 generations it has been cared for by the Keller family, whose historical roots go back to neighbouring Germany. When Alexander took over the family's baton at the turn of the millennium, he decided to move the farm closer to organic. However, his desire to combine the environmental and social, along with the long-term sustainability of the farm, eventually led him to biodynamics. His goal is to connect all the plants, animals, soil and human components to create a living, interconnected organism on the farm that prioritizes the health of the natural ecosystem. Santa Isabel is the first and so far only biodynamic farm in Guatemala.
Our lot of the hybrid Sarchimor variety was processed through anaerobic fermentation in stainless steel tanks where the cherries sat for 42 hours. As a result, when brewed, the coffee resembles cherries, nectarines and red tea.
