What is GourmetCoffee Specialty?
It's a true specialty coffee that has been carefully selected and roasted for us by Beansmith, a selective roaster. There are many definitions, one of the more specific ones from the SCA (Select Coffee Association) states that they are coffees that score at least 80 out of 100 in a professional evaluation and have no accurately mentioned defects in taste. You'll also find 100% transparency (farms, importer, roaster and retailer) with our select coffees.
What's different about our selection coffees?
Don't expect a distinct bitterness in the coffee, as they are roasted lighter than regular coffees. These coffees are roasted primarily for espresso, but that doesn't mean they can't be interesting in a mocha pot.
Preparation tip
We don't write the exact grind coarseness because every grinder has it differently, but you can try grinding to get about what we've got below. But it's really one of many different cases. It's just kind of a jumping off point.

Information from the importer
Peru El Zoral
Sujeily Perez is a young professional producer with an entrepreneurial and innovative spirit who has been growing coffee for 4 years. His farm "El Zorzal" is located in the Alto Shimanilla sector, just 5 minutes from the district of Chirinos, and lies at an altitude of 1850 meters above sea level. The name of the farm 'El Zorzal' comes from the indigenous Peruvian Andes bird, which lives only in this area in the Chirinos district, in the province of San Ignacio in the Cajamarca region.
The coffee on this farm is harvested by hand and then sorted according to quality and density. This is followed by a washing and pulping process. After pulping, the coffee undergoes a 42-hour fermentation process, after which it is washed and scented in parchment. Finally, the coffee is dried, which takes approximately 12 to 18 days in a solar dryer. After drying, the coffee is stored in plastic bags on a pallet.
Brazil Minas Gerais
This is coffee harvested in the famous Minas Gerais region. It achieves NY2 quality, which allows only a very small number of defects. The coffee is size 17/18 - the second largest you can buy from Brazil. It is therefore a very high quality Arabica, with a more conservative taste.
