Coffee Gardens connects the local community to produce ethically sourced coffee and provide a direct link between growers and consumers. The coffee cherries are transported to the processing station by about 160 runners within hours of harvest. Here they are peeled, undergo a special fermentation process involving washing, a long soak in cold spring water and a 40-hour fermentation before a final washing and careful sorting.

The SL14 variety, typical of Uganda and Kenya, is drought and cold tolerant, taller in stature and has light brown leaves, but is susceptible to disease. SL28, also grown in Malawi and Zimbabwe, has excellent flavour, tolerates drought well but also suffers from disease. Nyasaland is of high quality, has a good flavour profile and is popular with smallholder farmers in Uganda.
