Chelbesa Danche is a new addition to our offer. The coffee comes from Ethiopia and boasts organic certification .

Chelbesa is the first of three places that SNAP Coffee owns in this area. The company was founded in Addis Ababa in 2008 by Negus D. Weldyes. The company currently operates three washing and processing stations in the districts of Chelelekt, Kochere in the Gedeo region and partner stations in the districts of Uraga (Guji) and Nensebo (West Arsi). On average, it delivers around 550 farmers to each station. Danche is located at 2100 meters above sea level, near the town of Worka in the district of Gedeb. Chelbesa is also the largest growing area in the district of Gedeb with a total area of 1240 hectares. The station buys cherries from approximately 313 surrounding farmers, who consistently produce quality crops thanks to fertile land and good farming practices. Danche Station also boasts organic certification, which in turn increases yields for farmers. The cultivars Welisho, Kurume and Ethiopian native varieties are mainly grown here. Girum Assefa is responsible for the management and supervision of the station, ensuring compliance with quality standards.

Local farmers here allow the cherries to ripen properly before harvest, as they know this increases the resulting sugar content. They also believe that their god will let them know when the time is right and they can start harvesting.

Processing - Cherries are harvested by hand and then also sorted by hand. As soon as the farmers bring them to the station, they peel them off on a traditional Agaarde disc machine, which removes the peel and flesh from the cherries. Then they travel to the sorting channels, where the machine sorts them according to density to the 1st or 2nd quality.

Fermentation - The cherries are further fermented for 72 hours followed by washing and further sorting. according to density. The lower density (lower quality) remains floating on the surface and is left aside, while in the channels only denser and therefore better quality grains remain, which are separated as batches of higher quality. Once sorting and fermentation are complete, the cherries are left soaked in clean water for about 2 hours to remove any pulp residue. Drying and manual sorting - This is followed by drying, in which the grains are spread in layers 2 cm high and dried for 10 days depending on the weather. This is followed by another manual sorting for 2-4 hours to ensure maximum quality.
