Roasting coffee is a real alchemy that ultimately affects the flavour characteristics of the coffee. Generally speaking, we are playing with the two basic characteristics of coffee, which are acidity and bitterness. In simple terms, the more we roast the coffee, the more we suppress its natural acidity and accentuate its bitterness. The Italians, for example, are well-known around the world for roasting their coffee to a very dark colour, whereas people in the Nordic countries prefer to enjoy coffee roasted to a very light colour.
If you don't like your coffee roasted to a higher degree, we recommend trying the lighter version of Ethiopia Sidamo. The beans are roasted to a lighter grade than our standard roast. The coffee is slightly cinnamon in colour and has a pleasant acidity. The body of the coffee is not as strong and distinctive as with a higher roast grade.

Ethiopia, located in the Horn of Africa in East Africa, is the country where the very history of coffee began to be written. The word 'coffee' itself derives from the province of Kaffa, where coffee is said to have been first cultivated. Nowadays, when Ethiopia is the largest producer and exporter of Arabica coffee among African countries and ranks 5th globally, it is still mostly in the southern part of the country that we find forests of wild coffee trees. About 98% of all coffee production comes from local small farms.

The Sidamo variety is a true African gem, one of the most sought-after coffees in the world. No wonder, since the art of coffee has been handed down from generation to generation.

The origin of coffee: In the Sidamo region, found in the southern part of Ethiopia, small farmers cultivate and produce one of the most interesting coffees in the world at an altitude of around 2,200 metres above sea level.

Flavour: Sidamo is characterised by a smooth and full-bodied flavour with a chocolatey richness, accompanied by a heady and deep spicy floral aroma with a hint of grape. The body is lighter and beautifully velvety. Each sip of this luxurious coffee concludes with a mild citrus aroma. The coffee is appreciated for its pleasant fruity acidity.
