The coffee beans come from the picturesque Gedeb region. Farmers here farm on plots of less than five hectares, and their farms are so small that they are measured more by the number of trees than by their size. Coffee growing here is linked to traditional methods and an organic approach. Coffee is grown in mixed 'coffee gardens' where other crops can also be found, and due to the small size of the plots, most of the fruit is hand-harvested by family members. This personal approach and respect for the land ensures the high quality of each bean.
The coffee is sorted to remove damaged or immature cherries. The skin is then removed using special equipment. The beans are then fermented for approximately 24 hours, depending on weather conditions. Once fermentation is complete, the grain is washed thoroughly and then sorted in washing channels. Each batch is divided into two classes according to density. Sometimes, after sorting, the coffee is soaked in clean spring water in tanks for 12-24 hours to remove all traces of fermented pulp.
Barista's note: Gedeb needs to be ground more coarsely as we are used to with other washed coffees from Ethiopia. We liked it best on the V60 at around two minutes and forty-five seconds. We much enjoy its floral aroma and light sweet body where notes of peach, hibiscus and meadow honey predominate. The aftertaste is dominated by notes of jasmine. It is also great for coldbrew.
