What is Viennese coffee
Viennese coffee (German: Wiener Melange or Einspänner) comes in several variations. In our region, it usually refers to black coffee (often a double espresso) served in a glass or cup, topped with sweet whipped cream instead of milk. The drink is often garnished with cocoa, chocolate shavings, or cinnamon.
Ingredients and tools
- 1 shot of freshly brewed espresso (or 2 for a stronger taste)
- 50–100 ml of whipping cream (at least 30% fat)
- Optional: sugar, cocoa, grated chocolate, or cinnamon
- Glass or cup for espresso
- Whisk or hand beater
Preparation steps
- Brew the espresso – preferably using a portafilter machine, moka pot, or French press. It should be strong and aromatic.
- Whip the cream – not too stiff. Aim for a light, semi-liquid texture that can be easily layered and sipped through.
- Pour the coffee into a glass – immediately after brewing so it stays hot.
- Gently layer the cream on top – using a spoon. This creates the typical two-tone effect.
