Preparation of Viennese coffee

Viennese coffee is an elegant classic that delights not only lovers of strong coffee but also those with a sweet tooth. It combines rich espresso with lightly whipped cream, creating a delicious contrast of flavors and textures. Perfect for a Sunday afternoon, guests, or as a dessert in a cup.

What is Viennese coffee

Viennese coffee (German: Wiener Melange or Einspänner) comes in several variations. In our region, it usually refers to black coffee (often a double espresso) served in a glass or cup, topped with sweet whipped cream instead of milk. The drink is often garnished with cocoa, chocolate shavings, or cinnamon.

Ingredients and tools

  • 1 shot of freshly brewed espresso (or 2 for a stronger taste)
  • 50–100 ml of whipping cream (at least 30% fat)
  • Optional: sugar, cocoa, grated chocolate, or cinnamon
  • Glass or cup for espresso
  • Whisk or hand beater

Preparation steps

  1. Brew the espresso – preferably using a portafilter machine, moka pot, or French press. It should be strong and aromatic.
  2. Whip the cream – not too stiff. Aim for a light, semi-liquid texture that can be easily layered and sipped through.
  3. Pour the coffee into a glass – immediately after brewing so it stays hot.
  4. Gently layer the cream on top – using a spoon. This creates the typical two-tone effect.
  5. Garnish to taste – with cocoa, chocolate, or cinnamon.
  6. Do not serve with a spoon – Viennese coffee is meant to be drunk through the cream, not stirred.

Tips and variations

  • For a sweeter taste, sweeten the coffee before adding the cream.
  • You can use flavored cream instead of plain (e.g. vanilla).
  • Using decaffeinated coffee is a great option for evening guests or those avoiding caffeine.
