About the farm and processing:
The Ferrufinofamily started the coffee business in 1992 and bought the Finca Aurora farm in 2004. They focus on quality varieties and innovative methods that allow them to produce excellent coffee, including 100% Parainema Experimental Natural. Dr. Enrique Ferrufino and his wife Silvia raised their children in a coffee environment. On the farm, they emphasize fair conditions for employees and the protection of nature. The coffee is Rainforest Alliance certified, which means it is grown sustainably and with respect for biodiversity.
The cherries are hand-picked, floated and fermented for 4 days in closed tanks. After drying on raised beds for 35 days, they rest for 14 weeks before peeling. The coffee is stored in Ecotact bags to maintain freshness.
Variety:
Parainema, bred in the 1980s in Honduras, is resistant to coffee leaf rust(CLR) and grows well at mid-altitudes. It is dwarf, which allows higher planting densities and higher yields per hectare.
