William is one of the farmers we managed to fund a hygrometer last year, along with the cafes that work with us wholesale as part of the Underdog project. This is a very important tool for checking the moisture development of the dried beans, making it easier to achieve consistency and make sure the coffee is in good shape for further storage and export. We are happy to be able to build on last year's collaboration and hope to continue to pull and develop in this way!

We asked William: How is your life connected to coffee?

"I am a third generation coffee farmer, following my grandparents and parents. Ever since I can remember, I have always been surrounded by coffee and understood the whole process from selecting the beans and germinating them, planting them on the plantation to growing them to their full potential, but little did I understand the coffee trade itself. That was always handled by adults, in my case my father. But even though I grew up around coffee from a young age, like most of my peers, I wanted to leave the countryside for the city. In our country, we have limited opportunities for development in the countryside, and this is doubly true for coffee growing, because we live in dependence on very volatile prices. It is often the farmer who takes away that uncertainty, which is why as a child I wanted nothing to do with growing coffee, because I felt that the results of my efforts were never seen. But when I was more or less 15 years old, I took my first courses on coffee production and became interested in growing choice coffee.

I am still taking courses and training, and I aspire to improve the quality of the flavour profile, that has always been my priority. I started to look into different fermentation processes. But I have to say that it's not easy to change our parents' way of thinking, although I can understand it, given that they were always in touch with traditional approaches, that is, plant the coffee, grow it, sell it at the price that's on offer. Well, it's hard to change that approach. I see it as a mistake that we are not looking for added value. And I've become very interested in that. But little by little I'm already seeing results, with a lot of effort and determination I'm already taking care of my own coffee trees, I can afford a piece of land and have a few trees for myself and my brother, this gives me enough freedom to start experimenting with new fermentation processes that have started to give us better taste results. Today, in particular, I am continuing the process of standardizing these fermentations."

The result of William's penchant for different types of fermentations is this lot, processed by lactic acid fermentation. Thanks to it too, you can expect a round, juicy body in the cup , a ripe fruit flavor with a long nutty aftertaste.
