Selected and freshly roasted coffee from Brazil Cafeina Group from the Rebelbean roastery in Brno.
Flavour.
Cafeina group is the name of a group of women farmers within the members of the Cafeina processing station. Together they comprise 1,154 women farmers out of a total of about 6,000 members.
Specifically, the Topazia lot processed using the classic Brazilian pulped natural method comes from two of them, "Jaji" and Flaviane. Together they cultivate a whopping 450ha planted with coffee and thus it is understandable that most of the cherries are harvested by machine. Although about a third, from the Jaji farm specifically, are hand-picked due to the topography of their family farm, Zaroca. After picking, the coffee is cut mechanically and stripped of most of the pulp, drying is done on concrete patios for 7-10 days, plus 30 more days in parchment for moisture comparison and so-called "respite". Then the hulling, parchment stripping and final cleaning of the beans takes place and tradá, the coffee can go out into the world!
Personally, this coffee was a big and pleasant surprise for us. We were selecting from lots for the Underdog blend, the imaginary borderline selection coffee of 84 points, and yet it made its way into the classic production, it was just too bad for the blend!
