What is Gourmet Coffee Specialty?
It's a true specialty coffee that has been carefully selected and roasted for us by Beansmith, the roaster of choice. There are many definitions, one of the more specific ones from the SCA (Select Coffee Association) states that they are coffees that score at least 80 out of 100 in a professional evaluation and have no accurately mentioned defects in taste. You'll also find 100% transparency (farms, importer, roaster and retailer) with our select coffees.
What's different about our selection coffees?
Don't expect a distinct bitterness in the coffee, as they are roasted lighter than regular coffees. These coffees are roasted primarily for espresso, but that doesn't mean they can't be interesting in a mocha pot.
Preparation tip
We don't write the exact grind coarseness because every grinder has it differently, but you can try grinding to get about what we've got below. But it's really one of many different cases. It's just kind of a jumping off point.

Information from the importer
FECCEG (Federación Comercializadora de Café Especial de Guatemala) was formed in 2006 in response to the coffee crisis. Its mission is to support coffee producing communities, facilitate access to markets and improve logistics related to exports. The organisation provides technical advice, promotes crop diversification, offers agricultural training programmes and assists with certifications such as Organic and Fairtrade.
Although coffee remains the main crop of these communities, they also grow honey, fruit trees and subsistence crops such as maize and beans. In addition, they plant trees to promote biodiversity and protect water resources. They also grow flowers and plants that attract bees and help increase honey production.
Each producer processes and dries their coffee individually on small terraces. They have their own roasters, fermentation tanks and washing systems. COMAL then collects the dried parchment coffee from the members and takes it to the FECCEG drying plant in Quetzaltenango. Here, a quality control team analyses each batch, which, depending on its quality, is either sold as a microlot or mixed with other coffees from the same organisation and category.
