GourmetCoffee Specialty?
It is a
true specialty coffee that has been carefully selected and roasted for us by Beansmith, a selective roaster. There are many definitions, one of the more specific ones from the SCA (Select Coffee Association) states that these are coffees that score at least 80 out of 100 in a professional evaluation and have no exactly mentioned defects in taste. You'll also find 100% transparency (farms, importer, roaster and retailer) with our select coffees.
Good decaffeinated coffee from anywhere other than Colombia? Yes, Ethiopian!!!
You
may have noticed that decaffeinated coffees are perhaps 95% from Colombia, for someone who likes to drink decaf it gets pretty boring after a while. And so we searched for something special until we found decaf from Ethiopia, processed with an unconventional CO2 method (see below). And to make matters worse, the coffee has a really special taste, don't look for any acidity, but a popcorn, caramel taste.
An exceptional way to remove caffeineThis
process was first discovered by scientist Kurt Zosel at the Max Planck Institute for Coal Research in 1967 when he was researching new ways to separate mixtures of substances. The CO2 process is a natural decaffeination process and achieves 99.9% efficiency. It is a gentle process in which liquid CO2 targets the caffeine in the coffee. This ensures that the taste of the coffee remains perfect! This process is completely natural and certified organic. However, this process takes the longest time, 6-7 days.
The
caffeine extracted from the coffee is refined and sold to the soft drinks industry.
The way the process works means that the other compounds in the green coffee beans remain intact,
meaning
that decaffeination has no effect on the taste and aroma of the final product.
The carbon dioxide
is very selective and does not extract the carbohydrates and proteins in the green beans that contribute to the flavour and aroma.
Preparation
TipWe don't write down
the
exact
coarseness of the grind, as every grinder does it differently, but you can try grinding it so that you get about what we get below. But it's really one of many different cases.
It's just a jumping
off point.
Dripper - 18g -a circular mill where he processes coffee from his farm and from growers, which he keeps separate and dries in raised beds near his house. Mustef's growers are neighbours and each have 4 to 10 hectares of land. He processes both natural and washed coffee and all the coffee is dried in semi-shade. We anticipate that Mustefa will have approximately 600 bags available. By working directly with importer Falcon we are able to make the supply chain much more efficient and maximize the amount of money that goes back to the producers.
