The history of Inzá begins in 1577, when the Spaniard Sancho García de Espino established a camp. ASORCAFE was founded on July 11, 2003 in Pedegral, near Inzá, to support local farmers to grow and sell fine coffee. Today it has 290 members and works in partnership with Siruma Coffee.
The small growers in Inzá farm plots of 1.8-2 ha and grow coffee up to 2100 m above sea level. Traditionally, coffee is processed using the washed method: after harvesting, the cherries are peeled, fermented for 20-40 hours, washed and dried in parabolic dryers for 8-15 days depending on the weather.
Inzá coffee is characterised by its higher acidity and cane sugar taste, thanks to the volcanic soil of the Puracé volcano. Microlot Tierradentro, however, showcases the best of the region's experienced growers. It has a sweeter, floral profile, thanks to the late harvest and superior processing. It comes from farms at 1 880-2 080 m above sea level and includes the Tabi, Pink Bourbon, Caturra and Colombia varieties.
