Edilberto Torres Sanchez is a coffee grower from San Antonio, Huabal. He grows the Catuai and Castillo varieties at an altitude of 1600 m and processes the coffee naturally. Huabal in Cajamarca is an area with great potential for quality coffee, although poor infrastructure prevents many producers from taking full advantage of the opportunities. The altitude of the producers is mostly above 1800 m. Producers, thanks to quality premiums, are now replanting varieties such as Caturra and Bourbon, which, if managed well, produce quality coffee with diverse profiles due to the different conditions in the area.
After floating, the ripe coffee cherries are dried on peat beds for 25 to 30 days.
