Norma Iris Fiallos is the owner of San Rafael Farm, located in the northwestern part of Los Limos, Honduras. Norma is one of the most innovative producers in the region. She has extensive fields with many different types of Arabica. Its farm is surrounded by pine forest, which affects the acidity of the soil and adds unique flavor profiles to the coffee. The coffee grows in the shade all the time and is thus only found on a fraction of the farmer's land.

All production goes to the Aruco mill where it is carefully collected and subject to perfect control throughout the processing. This control allows for consistent processing and reduces the risk to the farmer. The wet mill is located at an altitude of 800 m above sea level, which stabilises the drying process compared to farms at altitude.

Once the coffee arrives at the mill, the beans are carefully sorted and graded according to the processing process and level used on the farm. The beans are cleaned, rinsed and sorted of all immature and overripe pieces. For example, our lot of the Paraneima variety was first dehulled and then fermented for 72 hours. It was then thoroughly washed once more and stripped of all pulp.
The coffee was then dried on African beds for 20-30 days based on the weather, which varies from hour to hour.

Producers here get 70% of the price for micro lots right out of the gate.
