Introducing this year's first naturally processed Ethiopia from the Chelechele region, processed by Ephtah Specialty Coffee - a producer with a focus on quality, sustainability and the involvement of women in the coffee chain.
Ephtah works with small farmers, providing up to 85% of the harvest upfront so they can focus fully on quality. The station has 200 drying beds and employs over 100 workers during the harvest. At the same time, it develops a number of social projects, such as nurseries for farmers' children and support for women under the Ama Commitment initiative.
The coffee consists of indigenous Ethiopian Heirloom varieties. After the initial washing, the cherries are dried on beds for 12-15 days, with the final bean selection done by hand.
Flavor-wise, this coffee offers a full, syrupy body, distinct sweetness and pure fruitiness. Notes of nectarine, flowers, bergamot and black tea dominate. The acidity is mild and fruity.
