What does Rebelbean Roastery say about coffee?
This coffee is going into production just in time. It is a typical representative of the so-called "winter coffees", as we like to call them. Thicker, juicier, full of the aromas we associate with Christmas, for example.
We haven't had La Bolsa on our menu for a while, but it's nothing new for us, we've had coffee from this farm for several times now and it's always a choice for stable quality. It's not a small farm either, they even built and run a school for the children of the permanent, and more importantly seasonal, employees so they don't have to spend time with their parents at work and thus inevitably get involved. However, what often happens is that the parents themselves want their children to work to contribute to the family coffers, but the Vides family has found a solution to this! Weekly food rations for the whole family! But only on the condition that the children attend school regularly, i.e. for 5 consecutive days. And by doing so, the children themselves actually contribute, plus they get at least a basic education. WIN WIN! For us, we would add a 3rd WIN, because we like this approach and we like the coffee, honey!
