"Rwanda and honey processing? Until recently a utopian idea, but now a reality worth tasting! We have selected a Rwandan red bourbon for our range that has been processed using the honey method at the private processing station Huye Mountain.

The station is owned by local David Rubanzangabo, who buys fully ripe and healthy coffee cherries from up to a thousand small farmers in the Huye area at premium prices. In addition, he is financially involved in supporting local farmers to access quality healthcare, small loans, eco-innovation and education.

On arrival at the station, the cherries are de-defecated (floaters) in water tanks, then mechanically de-skinned, but most of the flesh is left(honey method), in which the coffee beans are dried on African beds for 25 days and under continuous rotation".
