Costa Rica is one of the countries that we managed to travel and visit the local farms. Among them is La Candelilla, which is more of a family processing station to be exact. Together, the Sanchez family farms on 70 hectares of land and annually processes about 100 tons of green grains, which is about 500 tons of cherries. A total of 7 siblings take care of the farm and the mill.

In general, Costa Rica is a fairly developed, rich country with good infrastructure. For this reason, the size of the family farm is somewhat different than, for example, in Guatemala or Peru. The areas for growing coffee around the capital San José are very diverse and the microclimate is quite different between them. Tarrazú is an area with high altitudes and very steep green slopes. In fact, we probably liked it the most and we got a great surprise there. The station ran like a perfectly lubricated machine, which worked 22 hours a day during the harvest. The machines were cleaned for the remaining two hours, so they actually operated non-stop . That's probably why they have a batch brew bunn for 3 liters of coffee in the office, no wonder.
