We roast coffee primarily on a filter, but it also works like a lot of fruit espresso.

La Montana - red cherry

At the El Borbollon mill, we asked them to make a natural batch this year using ripe cherries selected from the best parts of the farm. The cherries are delivered from the farm, where they are then soaked and separated to ensure that only ripe cherries are used in the production of these batches. Once the cherries are ready, they move to the garden. Usually late in the afternoon, so they lose their initial humidity without a "heat shock" from the strong afternoon sun. They are then left unattended for 48 hours to stabilize and prevent damage to the cherry surface while it is soft. Coffee is turned every 45 minutes - 1 hour on the terrace until it reaches a humidity of 11%. Drying on the terrace usually takes 10-14 days. To stabilize it, it is left in bags in the grain for 30 days. It is then peeled off and ready to be sent.
