When Emerson D. Silva's family stopped farming potatoes and rice 30 years ago and turned to growing coffee trees, it sparked an enthusiasm and passion for coffee in everyone. Emerson is helped not only by his family, but especially by the farm's location and climate.

Emerson himself plans to plant new varieties of arabica and improve the care of the coffee trees, harvesting and processing so that the improvements lead to new flavours in the cup.

After picking, the coffee cherries are washed and placed in barrels of water, where they ferment without air for 96 hours. The cherries are then placed on African beds, dried and turned periodically to achieve the correct moisture level.

A very unusual taste for a Brazilian coffee, full of sweet, fruity and vanilla notes, it captivates especially on the filter.
